Sausage, Zucchini and Burrata

This quick meal is a real winner. It’s fast, nutritious and very satisfying. You could easily serve it with some pasta or keep it as is, Low Carb and Keto. You could even make a big batch and freeze it for a quick pasta sauce. It’s just so simple and delicious, give it a try and thank me later!

Quick Sausage, Zucchini, Parmesan and Burrata, serves 2

  • 4 Spicy Spolumbo Sausages
  • 1 large zucchini, diced, or mushrooms or peppers would work too
  • 1 container Burrata
  • Fresh Grated Parmesan, about 1/2 cup
  • Rao’s Pasta sauce, I use Marinara, 1/2 jar, or more if serving with pasta
  • Pepper

In a large frying pan, set on medium heat, add the sausages, but remove from casing first and start cooking. I slice the sausage lengthwise to remove the casing easily. Breakdown the sausage into smaller bits while it cooks. Meanwhile, dice up the zucchini and add it to the pan. Cook until it starts to soften 5- 10 minutes. Add pasta sauce, heat till warm. Serve in a bowl. Top with burrata pulled apart, freshly grated parmesan and pepper. Or serve over pasta if you prefer.
