

It literally took me more time to eat this meal than it did to prep it. And it cooked in the time I had a shower AND it made me two meals! To think I was disappointed when I looked in the fridge after my workout and saw only a pack of chicken breasts. Then it came to me like an Episode of Chopped. I threw this amazing meal together with only 4 ingredients! The prep work took 5 minutes and before I knew it I was back downstairs with my hair turban on feasting on an amazing healthy and delicious lunch.
I have to admit, this recipe was heavily inspired by the Baked Feta TikTok that went viral. If you haven’t seen it I added it below for your viewing pleasure. I didn’t have feta, but in my opinion burrata is a better choice for this meal. Burrata is a creamy mozzarella. It compliments chicken breasts perfectly as it adds some richness.

My only regret is I should have added more tomatoes and asparagus, especially tomatoes. They become so sweet and juicy when they are roasted and make their own little flavourful sauce. Oh and the addition of basil, I really wish I would have had some to sprinkle on top. Other than that, this is definitely a meal I will be making again, over and over. Not only is it quick, but it’s easy to add extra for another meal. Plus, it works for either lunch or dinner.
To save timeI like to use a good quality pre-made spice mix. In this recipe I used a Greek seasoning that I purchased from The Silk Road, which is a beautiful store here in Calgary. If you have never been I would highly recommend checking it out. They have dozens of different kinds of paprika, cinnamon from around the world (my favourite is Vietnamese), yellow, green and red curries, crushed and whole chillies, spice blends (Tex MeX, Cajun Blackening Spice, Herb Provencal) it goes on and on, it’s truly mind blowing. Not only is this a quick and easy lunch/supper, but it is also low carb and Keto friendly. Or if you like serve it with a baked potato for some added carbs. My preference would be a nice glass of white wine:)

Baked Chicken with Veggies and Burrata, serves 1-2, takes 20 min
- 2 chicken breast
- 2-4 tbsp olive oil, I used 4
- cherry tomatoes
- asparagus
- Burrata
- Greek Seasoning, or about 1 tbsp oregano, 1 tsp garlic salt, 1 tsp pepper, or garlic cloves minced
- 2-4 tsp chili flakes, I used at least 4
- 6-8 chopped basil leaves
- 1/2 lemon juice
Heat oven to 400F. Place chicken on a cutting board and with a wine bottle or rolling pin whack the top thick part of the chicken a few times until it becomes even with the bottom. Pour oil in an oven proof dish (I used a pie plate). Don’t use a dish that is too large or the juice with run out an evaporate, you want everything to be snug. Place chicken in the dish with oil and toss. Coat the chicken on both sides with the spice mixture. Throw in the veggies and toss around in the oil. Squeeze a half a lemon over the top. Pop in the oven for 15-20 minutes. Plate with the juices and some torn burrata on the side and a sprinkle of fresh basil.
