Chocolate Peanut Butter Bars

I’m not sure why I decided to make my own chocolate, or why I decided to add coconut oil to the melted chocolate, but the results were amazing! Coconut oil gives the chocolate a more luscious, melty texture in your mouth that I really enjoy.

I thought making your own chocolate would be time consuming, but it’s actually very quick and easy. (I guess it’s more like customizing your own chocolate, rather than actually “making”chocolate). I’ve experimented with a couple different recipes like adding dates, or ginger, different nuts and they were all great!

All the recipe really entails is melting chocolate, freezing it for a bit and adding peanut butter. If you choose to only do one layer then it takes about 10 minutes only.

I use a silicone Epicure tray but Amazon has a huge assortment. They even have cute little pineapples! Or, you could even use a mini muffin pan with liners.

Chocolate Peanut Butter Bars

  • 200 grams 70% chocolate (I use Lindt), broken up into smaller pieces
  • 2 Tablespoons coconut oil (I prefer organic virgin)
  • 1/2 cup organic peanut butter (smooth or crunchy)
  • 2 Tablespoons honey, or more if you like it sweeter
  • Maldolin flake sea salt (optional)

In a saucepan over low heat add chocolate and coconut oil. Stir occasionally, but make sure you don’t try to melt it too fast. As soon as it melts pour it in a measuring cup that you can pour from. Fill your mold a little less than half with the melted chocolate. Pop it in the freezer for about 15 minutes, until it has hardened. Mix peanut butter and honey in a bowl, taste and adjust sweetness if you like. When the chocolate is hard spoon a layer of peanut butter on top and push down with your fingers to even it out. It’s up to you how thick you would like this middle layer. Pour remaining chocolate over top. Sprinkle with a couple flakes of sea salt and freeze for another 20 min. I like to use pieces of wax paper to wrap mine in. (There is a video below). They would make nice gifts anytime of year.

Another option is to only do one layer and then top it off with whatever you would like. A couple suggestions:

  • Candy corn for Halloween
  • Crushed up candy canes for Christmas
  • MiniEggs for Easter
  • Chopped up dates or nuts add a nice texture
